Thai Chicken Sliders

Hey everyone!

I have brought another yummy recipe to add to my collection. I have many more to come, I just need to type them up! I am cooking a lot more now and have started “putting things together” without using a recipe! It is challenging for me because I think I would be very upset if I threw things together and it did not come out right. But so far so good!

This recipe came about because my husband, Nick, wanted some Thai food. So of course Pinterest is the place to go when looking for new things to try. I came along this recipe and I figured we would try it out.

I made the recipe the first time with everything as it was in the original recipe *link at the bottom of this post* (well almost everything, Could not find Bok Choy at the Commissary so I purchased Baby Bok Choy. I also used a George Foreman grill to cook everything on…)

****Very Important: I had a tough time finding the Thai Roasted Red Chili Paste… Thai Kitchen makes this and I ended up having to order it from Thai Kitchen’s website. BUT it has been an ingredient in many other recipes so I found it on Amazon in Bulk. Definitely worth it, brings a little bit of a sweetness to some recipes.****

We have made this recipe multiple times since and have omitted the cilantro (we are not big Cilantro fans), omitted the Vegetable Oil since we don’t need it with the George Foreman grill and we added a little salt, Crushed Garlic and some Cayenne Pepper. I personally am not a fan of the Bok Choy Leaves so I switch it out for Baby Spinach leaves on my sliders. My husband loves it with the Bok Choy Leaves though. The best part of this recipe is that all 3 of my minions LOVE these. (This would be a 7 year old, a 6 year old and a 2 year old, all agreeing on one dish…)

Chicken Sliders
    • 2 packs Kings Hawaiian Dinner Rolls
    • 2 pounds Ground Chicken
    • 1/2 cup chopped Green Onion
    • 2 tablespoon Thai Roasted Red Chili Paste
    • 4 teaspoons Fish Sauce
    • 2 Lime, juiced
    • Garlic Powder
    • Crushed Garlic
    • Cayenne Pepper
    • Salt
    • Black Pepper
    • 18 Bok Choy Leaves (Or Spinach Leaves)
Sriracha Mayo Sauce
  • 1/2 cup Mayonnaise
  • 1 tablespoon Sriracha (or more for taste)
Sliders
    • Plug in the George Foreman Grill.
    • Split the Kings Hawaiian Dinner Rolls. When grill is hot, heat both sides of the rolls until you have grill marks. Set them aside.
    • In a bowl season the meat with some garlic, cayenne, salt & pepper. Mix in the chili paste, fish sauce, lime juice & green onion. Form 18 small slider patties.
    • Grill the sliders for a few minutes on each side until cooked through.
Sriracha/Mayo Sauce
    • Whisk together the Sriracha sauce, mayonnaise & a pinch of black pepper.

When the sliders are completely cooked, assemble your sliders how you would like them or this way: Bottom half of roll, sriracha/mayo sauce, bok choy or spinach leaf, sliders, more sauce and then top half of the roll. Feel free to add to the toppings also.
